What would you serve for a simple lunch

I'm having my mom, sister, and 3 nieces here on Monday (so 4 non-picky kids and 3 adults).  I have an appt at 11 and will be serving everyone lunch when I get back,  Any new ideas for something simple and tasty.  Bonus points if it uses chicken thighs that a have a huge package of.

I would slow cook them babies and pull them and make them into pulled chicken barbeque, serve that with some chips and guacomole and a green salad

Here's a super quick and easy recipe for Cornbread Chicken Pot Pie.  My family loves it.  I always add carrots and peas to get some more veggies. 

And maybe make some strawberry shortcake for dessert.

Hi!  Sorry to respond so late - I would grill the chicken thighs (or broil them) and would serve with Anna Pump's Cucumber Salad and Danish Potatoe Salad.  Our family favorites...  kids love the Cucumber Salad BTW.

Both salads can be made the night before - let me know if you need copies of the recipes.

 For dessert - would probably do fruit and perhaps cookies/brownies.

How do you feel about grilling?  I've posted this recipe a million times, but it's really good and really easy.  Scalloped potatoes, a salad, and a roll and you're set.

Part of our grill is in the garage, the other part is on the deck, and the propane tank is empty.  Grilling is out for Monday but I've bookmarked this recipe.

I would do a pasta chicken salad, hummus/pita chips and mini sandwiches.  You can even add in some fruit if you'd like.  All can be made a head of time and taken out of the fridge immediately to serve, no need for oven or stove before serving.

I ended up putting the chicken thighs (bone in, skin on) in the slow cooker with some BBQ sauce on Sunday then shredded it up to reheat Monday.  I also did a pasta salad and had fruit.  My mom brought some chips and I had a strawberry cake for dessert.  It was perfect.
