What to do with ricotta cheese?
I recently made baked ziti and have a fair amount of leftover ricotta cheese (the larger tubs were on clearance, and were cheaper than the smaller tubs, so I knew I was buying too much, but it cost less money to do that!).
So, any thoughts on something not too complicated I can make with ricotta cheese? Thanks for any ideas!

I use it as a middle layer when I make eggplant parm. Just slice some eggplant, bread it, bake at high temp until golden brown, then add sauce to the pan, and layer the eggplant rounds, drop a TBS of ricotta cheese on each round, add more sauce, top with another eggplant, more sauce and a final top of mozzerella cheese.
If you have the ingredients, it's the best way to use-up ricotta cheese.
Or you can do another small batch of bakes ziti and freeze it.
dollop it on pizza
drizzle with honey, add fresh mint, and eat for breakfast
