Stuffed Pepper idea/recipes?
I have several peppers to use, and I was kinda hungry for stuffed peppers... I wanted to try something different than beef/rice mixture to add into it.
What do you like in yours? Recipes/links to share?
I do have some chickpeas, was thinking about using them and some tomatoes with spices to add, but never tried it before... Any tried and true recipes with something similar?

I stuffed zucchini but you could certainly stuff peppers with this mixture too - yum!

Taco Stuffed Peppers
I make my stuffed peppers with ground turkey instead of rice/beef. Finely dice up some onions, mushrooms and even some extra peppers cook it all up with the turkey and some tomato sauce and then bake in the oven until the peppers are tender.
My family loves it!
