I made http://www.pink-parsley.com/2012/03/cheesy-baked-pasta-with-roasted-red.html recently and it was really good, although next time I will use shredded mozzarella instead of slicing it thin so it will melt better. I also didn't bake it in a skillet but in a Pyrex dish.

I make lasagna-like stackers for DH and I - each stack is around 4 pcs of lasagna layered with cheese, sauce and basil. It's very pretty plated. The base of cooking the lasagna is like this recipe states - I slice them so each piece is like a circle then instead of layering all in a dish, just build each stack separately and bake till cheese melts.

I also had a good stuffed eggplant recipe that I'm still looking for. Will post when/if I find it.
