Hello! What is your favorite carrot cake recipe? It's DH's favorite and I thought it would be great for Easter. Thanks!

Here are the ingredients in mine -
2c plus 1Tbls flour
2t baking soda
2 t cinnamon
1 t salt
1-1/2 c veg oil
3 eggs, beaten
3 c grated carrots
and mine says bake 350 for 30-35

I have a tropical carrot cake with white chocolate cream cheese frosting on my blog. I made it as cupcakes, but it works just as well as a layer cake, baking time just needs to be adjusted. Link in sig. (Sorry I'm on my IPad and can't link directly.)
