Rice Flour and Leftover Dutch Crunch Topping

I just made a batch of Dutch Crunch bread but have a lot of leftover topping. Does anyone know if it can be saved, and if so, what the best method would be? 

I also now have a lot of leftover rice flour - any ideas on what to make/do with it? I've checked out google but it seems like most American recipes only use rice flour in gluten-free dishes. I got the flour from an International market, though, so I'm assuming other cultures use it in dishes, but I'm not finding much.
