Need suggestions for weekend lunches...

This sounds silly, but we're always up in the air about what to eat for lunches over the weekend. We typically bring leftovers from weekday dinners for lunches, and Friday nights we go out to dinner. Thus Sat/Sun, we're always kind of scrambling and getting "creative" as to what to make.

What do you guys eat/make for lunches on the weekends? Maybe I just need to buy more staples?

  • We typically do some type of salad - lettuce based or often chicken or tuna salad. Sometimes pb, banana and honey sandwich or burgers. In the winter an easy favorite is grilled cheese w tomato soup. We're always out doing something: errands, house or yard work, so weekend lunches for us must be quick and easy.

  • We also struggle with this, it makes me wonder how we manage to feed ourselves the rest of the week! 

    Like PP a winter staple is grilled cheese and tomato soup. 

    I find that most soup & stew recipes make a lot, so I try to freeze two portions worth for a later weekend lunch (the rest is portioned out for individual lunches).

    In the summer I enjoy grilled burgers or the occasional hot dog.

    Other things we have had recently are quesdillas, fish tacos, panini sandwiches.

  • Like pp, this seems to be our weakness.  Dinners and weekend breakfasts are always planned, but lunch seems to fall into a black hole.  If we eat at home, it ends up being leftovers, grilled cheese, or quesadillas, but half the time we end up grabbing something while we're running errands.  I think part of it is that after cooking pretty much every night, packing up lunches, making Sat morning breakfast, etc. I just don't feel like cooking lunch too.  I need to just suck it up and make sure that there's always sandwich or salad stuff on hand.

  • We tend to throw together the randomest lunches from fridge leftovers from the week's cooking. I always keep the freezer stocked with some of our favorite Trader Joes frozen products to have as a quick back up. Now that I work Friday nights, we've also been enjoying a weekly lunch out on Saturday or Sunday instead of a dinner.
  • Many times we end up not eating lunch, since we tend to eat breakfast a bit later.  But when we do it's usually sandwiches or salads.  
  • We like to keep wraps and tortillas in the house so we can throw random beans and veggies in them for a quick lunch. Salads are another quick lunch go-to for us as well. 
  • Sometimes we rearrange our meals on the weekend. Lunch on the weekends tend to be light - sandwich, salad, etc.
  • We either eat breakfast super late (like, 11 am) or go out for lunch, especially on Saturdays.  I can't even remember a time when I've cooked an actual weekend lunch. Actually, by Saturday, I don't have any food left in the fridge!
