  • Do you slow cook? If so, stupidly easy Salsa Chicken, I use low fat sour cream, etc.

    We put this black bean salsa on baked sweet potatoes and it's sinfully good, I really load up on lime juice.

    This wasabi salmon is my favorite ever, super easy.

  • What kind of food do you like?  I tend to think I have healthy cooking in general, not just individual recipes.  So, if you tell me what you want to eat, I can probably come up with a healthy way to prepare it.

    ftr,I wouldn't have called that salsa chicken linked above healthy due to the canned soup and sodium laden taco seasoning (if pre-bought), so judge my perspective for what it's worth.  I'm not criticizing Irishcurls, but I think I may have a different perspective on what's healthy than some.

  • We eat a lot of chicken. I'm allergic to sea food so I don't make much of I but a recipe I can make one serving fish and the other chicken for me I'd be fine with. We like fruits and vegetables too and normally have a lot on hand since we go to the farmers market on Saturdays. 

     

    I guess Im just so tired of grilled chicken and a side of vegetables, but I don't know what else to make. I also love my slow cooker and we have three of them haha.

     

    We're just trying to overall eat healthier, but still enjoy our food.

  • When I make chicken salsa, all I put in there is black beans, slasa, and chicken. Sometimes I'll add some sour cream or cream cheese (I actually use neufchatel cheese). Most the time I just eat it shredded, without tortilla.

    I made this cauliflower pizza today, and I made an extra crust for later (I didnt put the cheese in the crust, and added some ground flax seed)

    I'll make stir-fry type meals, no rice for me

    Shepard's pie with mashed cauliflower instead of mashed potatoes (South Beach recipe, I can give you if you want, I have to look it up)

    I make a ton of roasted veggies to eat with things so I fill up on those- super easy. Just toss veggies (I use broc and cauliflower a lot, also zucchini or mushrooms) in EVOO, some garlic and sea salt (or whatever spice you want) in the oven for like 8-10 minutes at 400 or so.

    Beef stew with a lot of veggies, less potatoes, in the crock pot.

    We make this tomato chicken meal in the crockpot- chicken, diced tomatoes and a spice packet (we got it from the spice "meal" center with all the packets of things. Its pretty good, we sometimes put it over pasta, I mainly don't.

    Ieat a predominately vegetarian diet, so when I do use chicken, it's used as an accent.  Is that something you'd be willing to try?  Some ideas with just chicken + veg to break out of your grilled rut...

    Stir fry with whatever veggies you have from the farmers market, plus some diced chicken is easy, cheap, healthy.  Serve with brown rice (I use instant b/c eff that 45 minutes for real brown rice). Leftovers can be turned into fried rice with a little olive oil. I love ponzu as a flavor to the stirfry.  I also keep diced ginger in the freezer for extra zing.

    Shredded seasoned chicken in burritos or fajitas.  I shred pre-roasted costco chicken pieces in my food processor.  A little lime vinaigrette is all you need for the veg.

    Chicken cacciatore is another meal type chicken dish that you can easily make healthy and use kitchen sink ingredients.  I use whatever wine I have on hand, a can of tomatoes or fresh if available, frozen spinach, and I toss in any veggies I need to use up.

    The only PW recipe I use: http://thepioneerwoman.com/cooking/2008/08/crispy-yogurt-chicken/  I use chicken tenders or strips of breast and put them on a salad.  H will eat the rest of the chicken for lunches that week, even cold. 

    I made this last week, using the sodium free broth I'd made from boiling that Costco chicken carcass down. http://www.epicurious.com/recipes/food/views/Chipotle-Chicken-Tortilla-Soup-350927  It was pretty good, although in the future I'll make it with dry beans.  No green veg, though :(

    This http://www.epicurious.com/recipes/food/views/Oven-Roasted-Mojito-Chicken-105575 is good.  I guess juice isn't necessarily healthy, but H loved it when I made it for a Cuban themed party.
