I want to figure out how to make grilled chicken like they do at Mexican restaurants... any suggestions?
Not sure if I know how to describe it... but in so many dishes that are served in Mexican restaurants it's the smaller pieces of chicken, seems to be grilled, and usually has a orangish/reddish color to it. I've looked online but haven't found what I'm looking for... of course, maybe I'm not describing it very good at all. Thanks if you have any suggestions!
Re: Mexican chicken how-to?
shredded with chipolte or adobo or any number of seasonings.
do you have any specific dish in mind?
you could try the chipotle marinade. It uses dried chiles, which gives it that color.
