Baptism lunch menu help

So on top of everything else this week, Mackenzie is getting baptized on Sunday. (did I mention I also have an appointment for a sigmoidoscopy which is sort of a lesser version of a colonoscopy up in the city on Friday)

We are just going to do a small simple lunch at our house after mass.  There will be Brice's parents, BIL, SIL and our niece, maybe Brice's grandma, 2 other couple friends and possibly 1 other family with 2 kids.  My whole family is OOT and not able to make it.

I am going to do pulled pork in the crockpot so that it will be ready when we get home and was also planning on doing a few sides.  I'll list what I was thinking of and please give me any suggestions for other items if you have them.  

- Pulled pork on buns with cheese, etc for toppings

- macaroni salad

-  cupcakes for dessert (or if I feel like I don't have time I'll probably get a cake made)

- Also thinking probably a veggie tray and maybe a fruit tray

Any ideas for what else I should serve?  It would need to be able to be prepared the day before or very easy to put together when we get home.  Thanks!

  • maybe some chips/pretzels, but really, I think for the number of people you're having..what you have planned is plenty
  • Not sure if you would want this with the macaroni salad already, but I always make coleslaw when we have pulled pork. And it's easy and can be prepared ahead of time. Maybe a fruit salad too?

    Sorry I'm not much more help than that, we just had pulled pork for dinner tonight so I wanted to suggest the coleslaw thing! lol.

  • This mac'ncheese goes so well with pulled pork... you could make it the day before, fridge, take it out of the fridge before church and throw it in the oven with the bread crumbs when you get back to heat it throughly with the bread crumbs. Super yummy... I think veggies and fruit are awesome for appetizers for when you first get home and are putting everything together. Maybe just a green salad for veggies, too...?

    Grade 8 oz block of Sharp tillamook cheddar. Cook LG elbow mac. Per usual and strain. While it cooks. In a sauce pan melt 1/4 c butter. Add 1/4 c of flour. 1/2 tsp salt, 1/2 tsp ground mustard. A dash of worshtishier sauce, dash of cayenne pepper. Bring to boil then add 2 cups of milk. Continually stir and bring to a boil...it will thicken. Take off the heat and dump in the shredded cheese. Mix till saucey. Dump over macaroni and mix. Dump in ramakins (or casserole dish). Top with italian panko bread crumbs and more cheese. Bake at 350 for about 20 min.

     

  • Pulled pork is great for guests! 

    This fruit dip friggin' rocks, gets gobbled up every time I make it, and can be made well ahead of schedule (even 2 days ahead lets it set and tastes so great) if you're looking for something to go with your fruit!

    Fruit dip

    1. 1 (3.4-ounce) package instant vanilla pudding and pie filling
    2. 1-1/2 cups vanilla-flavored yogurt
    3. 1 teaspoon vanilla extract
    4. 1 (7-ounce) jar marshmallow cr?me
    5. 1 (8-ounce) container frozen nondairy whipped topping, thawed
    Mix ingredients 1-4 with a hand mixer, then fold in ingredient number 5.
