5 medium idaho potatoes, washed
2 huge, like gigantic tablespoons promise buttery spread
3 table spoons flour
half a white onion, chopped
one carrot, peeled and finely diced
1/2 teaspoon minced garlic from the jar
about 2 1/2 cups chicken stock
about 2 1/2 cups skim milk
left over ham from easter (about a cups worth chopped)
a few table spoons heavy cream
salt and pepper to taste
Place potatoes on a paper plate and microwave for 5 minutes. After 5 minutes, check tenderness, and microwave for 3 or 4 more minutes until soft
While microwaving, melt buttery spread in a large stock pot.
Add onions and carrots to the pot, let cook for a few minutes until tender. Add garlic after 3 or 4 minutes
sprinkle flour on veggies and stir. Let cook for 2 -3 minutes
slowly add chicken stock, about a cup at a time and let thicken between each addition. Add milk in the same manner.
Dash your salt and pepper to taste
(around now your potatoes should be ready). Cut potatoes in half length wise. Scoop out half the filling into the soup. discard those skins.
Take the other halves and chop (skin on) into bite sized bits. Also Chop the ham into bite sized bits
Lower heat to a bit below medium, let simmer ~20 minutes. (I took a shower during this break, instructing H to stir ever few minutes).
Im back and fresh and clean! Use an immersion blender to blend soup
Add ham and potatoe bites
Add heavy cream and stir to incorporate
Serve with shredded cheese & sour cream (and scallions if you have it)
I paired this with a nice mixed salad. It was a great dinner, soup was the perfect thickness. Do you have any advice on how I could improve this? Taste or health wise?

It already seems fairly healthy. I'd be interested to see anyone's suggestions to make it even more healthy, without jeopardizing the flavor.
What did you not like about the taste that you want to improve (because it sounds like you liked it)? I would switch to fresh garlic for sure and real butter.
A little thyme would be good, too.
It sounds healthy as-is. If you want to omit the cream, you could use Greek yogurt. And then of course lower fat cheese and sour cream for the toppings.
I did like it. I probably will make it the exact same way next time, but with real garlic and butter (if I have it, I don't normally get real butter unless I plan to bake cookies or something)
