Defrosting cake?

I feel horrible! H and I are headed to a weekend getaway for our 1 year anniversary. We are about 2 hours from our destination and I just realized I forgot to move our wedding cake top from the freezer to the refrigerator to defrost. Any advice on how to defrost it quickly without it being completely gross? I'm guessing microwave, but ugh. Our actual anniversary is Sunday so we were going to do the tradition when we got home that evening. I wasn't really expecting year old cake to be great in the first place, but now I think it will be even worse! Any thoughts?

Re: Defrosting cake?

  • This is weird, but I read a trick on Cooks Illustrated that if you put the frozen thing on a stainless steel surface (like most not-nonstick skillets), it defrosts a lot faster. I've definitely noticed this to be true lately.  Depending on how big your cake top was, it'll probably still take a couple hours to defrost this way though.
  • If you take it out and use a knife dipped in hot water to cut a piece it really shouldn't take too long to defrost, if you're willing to wait a little bit it :).
  • If you pull it out as soon as you get home and leave it at room temp, it shouldn't take long to defrost at all.
