In less than two weeks we are moving back to the States! My ability to nest on U.S. time zones is getting closer!
We're living in a house with the few things left in the cupboards/fridge that I couldn't pack and the furnishings provided by the landlord. I still think I'm doing a dang good job of getting food on the table. Last night I finished off my open container of yellow lentils to make soup with onions, carrots, curry powder, cumin, and some garlic/ginger paste (all this pretty much equates to dal). Pureed, put back on the heat, and added a pack of frozen chopped spinach. Served with rice and haloumi (local cheese). Although at this point I have a single decent, well-rounded meal I can produce and after that we enter the realm of extremely interesting. Good thing we're moving to the hotel soon.
For those who don't recognize my screen name, I've been on this board since 2007. My husband is Navy and we moved to Gaeta, Italy and then to Bahrain. Now, four years after leaving, we are going back to San Diego although with two kids.
I do have a food confession/funny from earlier this week. In my attempt to clean out the fridge I sauteed up all kinds of veggies, added a pound of ground beef from the freezer and browned, then added various quantities of various sauces from the fridge and cupboards. More of a bbq sauce base for flavor identification. Served with baked potatoes and sour cream. When DH asked what it was I replied "stuff". He asked what kind of stuff. I replied with "stuff that goes on the baked potato". He stopped asking questions.

Do people really not know what haloumi is?
And THANK GOODNESS YOU'RE COMING HOME! I've been meaning to email you for weeks asking when you'd be back.
Sadly, I'm sure that many do not know what haloumi is. Or how fabulous it is grilled and served in a sandwich with grilled eggplant and chopped fresh mint.
I'm still not sure what day I'm getting to SD. DH has to be there by the end of May to start work but the kids and I may stay up North for a couple extra weeks.

It's bittersweet. But I am happy to be coming back. And extra happy to be missing another summer here.
