Baked walleye help!

DH isn't a big fan of fish but is game to try walleye tonight. I know I want to bake it but have no idea how. Any recommendations would be fantastic! And, we can't use eggs or egg wash due to allergies. TY!

  • I've baked fish in foil packets, topped with a mixture of small can diced (unsalted) tomatoes, chopped kalamata olives, capers, lemon zest and oregano.  This is delicious and good at concealing "fishy" tastes while still complimenting the fish.

    You can also do just a simple lemon & fresh thyme or lemon and other fresh/dried herbs.

    I like to thinly slice lemons and lay the filet on top of the lemons to bake/broil.

  • I usually do foil packets in the oven with my fish.  I've never made walleye, but I've made landlocked salmon and lake trout.  I usually use lemon juice & just salt & pepper the fish. If I ever had real lemons in the house I'd consider putting a couple of slices in the packets.   

    However, if your H isn't a big fan of fish, I'd probably try using milk to coat the fish with panko breadcrumbs.  Drizzle some melted butter on top and bake. 

    When we are camping we use Ritz crackers for breading, and I've even resorted to Cheese Its before because I absentmindely ate all of my Ritz crackers before dinner.

  • I just about grew up on walleye from northern minnesota.

    Mother would cut it into serving size pieces, coat in egg wash, and then crushed saltine crackers, and fry in light oil.  So good.  So that's the only way I know.

    Do you use an egg substitute?  I would think this could be baked also.

  • Walleye doesn't bake super well with any sort of breading (and if someone has a tried and true way, please send me the recipe!).  However, broiling wallye with some simple herbs has always been successful, and more importantly, yummy!
