How did your dinner turn out last night?

It was in the high 80's here so I made a big salad:

spinach leaves, tomato, fennel, red onion, avocado, chickpeas and tuna fillet (the good Italian kind in oil) with a dijon/shallot vinaigrette.  A hardboiled egg would have been perfect, wish I'd made some on Sunday when I was considering it.

Tonight is frozen pizzas b/c I need to clean and our exterminator is coming.

  • We unthawed chili from the freezer on Sunday for dinner since it was getting cold here again.  Last night we used the chili to make a taco-ish salad.  It was lovely. I added raw onions, celery, salsa, hot sauce, green chili sauce, and sour cream.  Yum!

    I do the same sometimes! Or with leftover taco meat.

  • We were going to have regular BBQ chicken, but H decided to make buffalo style bbq chicken instead.  He made two different sauces - mine was more bbq and less hot sauce than his was.  Instead of regular drumsticks he got the smaller legs and wings.

    They came out really, really well, and I ate way more than I should have.  

  • Well, besides the fact that I managed to cut my index finger and it would NOT stop bleeding, it was good. :P

    We also had a salad - spiced chicken with romaine, black beans, corn, tomatoes, cucumbers, baked tortilla strips, cheese and a salsa/ranch/sour cream dressing.

  • I didn't cook so it was just OK. Rough day yesterday (a friend of mine from college died after being in a freak accident over the weekend, laptop you might have seen news coverage in the papers since it was on the PA Turnpike), coupled with being OOT all weekend and not grocery shopping = takeout.

  • We went for a late lunch so we just had ice cream...it was soo hot yesterday and I wasn't in the mood for anything else. It was delicious, but I had to remind my H that ice cream is NOT normal dinner. :)
  • Mine turned out really well actually!  We grilled marinated pork tenderloin, I dont know what it was marinated in, it was one of those pre-packaged ones.  I hardly ever cook with pork, I think my mom scarred me from making shake and bake pork chops like 3 nights a week for my entire childhood!  But everytime I make it, I am always suprised at how good it is!  This one was super tender and yummy.  We had a frozen veggie mix and garlic rice on the side.

  • DH got home late last night and we hadn't gone grocery shopping, so we went out. I liked what I ordered but it was a bit too spicy.
  • I thawed out some bbq pulled chicken from the freezer.  Nothing spectacular last night but it was better than takeout. 
  • I did piperade (peppers, tomatoes, onions and spanish smoked paprika) sauteed and put it on toasted ciabatta with goat cheese. I think i should have gutted the ciabatta...way too much bread.

    And then a romaine salad with clementines, olives and peppadew peppers. That turned out well.

  • DH has been away, so he wanted something pretty simple and healthy.  I made big salads full of veggies & we threw some chicken on the grill.  Hit the spot.

    You should try your own marinades sometime!  Usually when you buy plain tenderloin you get two in the package so I usually separate them and then individually freeze in a marinade (so that as they thaw they marinade).  Also cheaper and healthier than the pre-marinaded ones.

  • it was actually damn tasty. i had some steak left over (that I froze a while ago), some peppers, onions, and pita bread that we had to use because we're going away for a few days. I basically made steak, onion and pepper tacos-and they were super tasty. side of rice and beans.

  • Dinner was super good last night!! We had honey and ginger marinated salmon, jasmine rice and carrots and yellow bell peppers! It also made the house smell so good! I love when dinner does that :)
