So I have leftover roast chicken and want to use it for tacos. I also have a leftover can of chipotle chiles in adobo. So am thinking of just rehating the chicken meat with the chipotles but if I use the chiles straight, I'm thinking the heat will knock me out. Thinking of maybe thining them out with some chicken broth? A squeeze of lime? Any other ideas or spices I should add?
I realize I could google this - but was hoping to get some ideas from this board.

If you have sour cream, you could always mix the chipotles with that instead. I love chipotle cream.
Anyway, you could simmer the chicken and chipotles in a little broth or water. I'd probably add a little garlic and oregano. Since chipotles are spicy and smoky, I don't necessarily think you need cumin.
I also really like the combo of honey + chipotles.
awesome - i DO have sour cream (mexican sour cream - yum!) - that's a great idea.
and i will give the chicken a simmer with some broth, chipotles, maybe a clove of garlic (i think i have mexican oregano too?) and tomato paste - perfect.
the chicken had a rub that went under the skin - chipotles, lime and honey. alas - most of it burned off on the grill (along with the skin - sad).
