I take out the oil and cook everything on low in the crock pot for 8 hours instead.
I love a good salad.
Grilled shrimp with couscous and grilled veggies.

The given scenario would never exist. I'd be driving up I95 towards VT and the Ben and Jerry's plant.
My favorite healthy meal is baked salmon with a lemon white wine vinaigrette sauce, served with grilled asparagus and couscous.
LOL. Very true.
Salmon, butternut squash, peas. Maybe add some baked sweet potato fries. Yum!! Also watermelon for dessert. Possibly a fruit smoothie. Just because it's healthy doesn't mean I wouldn't want a lot of food!

We make some version of taco salad with beans all the time. Last meal = add lots of guac
Last night I made sweet potato black bean enchiladas for the first time. I left the cheese off (trying to dial down on the dairy a little bit) and they were still amazing. Which for a cheese lover, is saying a lot!
My most favorite healthful meal would probably be spaghetti [squash]. mmm.. I could eat that every.single.day.
That or vegetarian chili from the crockpot... When H is gone those are my like.. only two meals over and over again.. haha
