so really - the float test only determines how fresh the egg is. as eggs age, an air pocket starts to form (carbon dioxide in the white escapes through the shell and is replaced with other gases). the older the egg, the bigger the air pocket. so...as the egg ages, it floats. it does not mean your egg is rotten. it just means that the egg is very old. probably best to discard but again, does not mean the egg is actually rotten. the only way to tell a rotten egg is to smell it - but due to processing standards, it's kinda rare to get a rotten egg.
for the record - i have been known to use eggs well over a month after the expiration date on the carton. i usually use the float test and when it floats, i get rid of it cause that is what I have always been told.

Yep. My mom has chickens and this is the test we always use.

and even if one is bad, doesn't mean the whole carton is bad. Grocery stores often replace cracked eggs with a good one from another carton. I checked a carton once, and the first egg I checked was bad, but the rest were fine.
