Anyone have any good, healthy crock pot recipes?
DH and I have been on crazy schedules lately, and aren't able to eat dinner together as much anymore. Any rec's?

I've roasted a whole chicken a few times. Make a ring of foil, put that in the bottom of the crock pot, and put the chicken on top. The skin won't get crispy and I wouldn't stuff it b/c of the long, low cooking time, but the meat is almost like a rotisserie chicken.
Also, I'd love to hear about recipes that don't include a can of cream of yuck soup!

I'm a fan of soups and chilis especially late in the week. They double as weekend lunches.
I love to put chicken breasts in the crockpot with approximately 1/2 cup water and some salt and pepper. Cook on low for 3-5 hours. Shred with a fork.
You can then use the chicken for many different recipes! Two of our favorites are: adding some salsa and cheese and make quesadillas or adding BBQ sauce to the chicken and put it over lettuce with black beans and corn for a great salad.
