Refridgerate or not?

I'm making a bday cake and I'm using PB icing. Peanut butter, butter, confect. sugar, and a few Tbs. milk. Do I need to refridgerate the cake when it's done? I usually make cupcakes with this recipe and refridgerate them, but I don't think I have room for a cake in my fridge right now! We will be eating it tonight. Thanks for any help!

  • If you are eating it tonight - I would say not to refrigerate. Especially since you don't have room. I honestly don't care for the texture of cake after it has been refrigerated and I only refrigerate it when I really have to (like I'm using whipped cream frosting).

  • A few tablespoons of milk for a few hours? I'd say no.

    But if you are concerned, which it seems you are, then refrigerate it.

  • You definitely don't need to chill it.  The milk will be fine.
  • That also depends on the temperature outside and in the house.  I put everything in the fridge!   So I would deff. put the cake in also.
  • I would not refrigerate it if you plan on eating it this evening.
  • Buttercreams (and your PB frosting is very similar) are safe to keep at room temp--there is so much sugar in them that it acts as a preservative.  You could leave them out for a week, and they would most likely be fine.

    Do you know if this applies to cream cheese frosting too? Cause...I'd really like to leave it out. That and anything with whipped cream in it I tend to refrigerate, but if I don't have to, I'd prefer not...

    Hmmm...not positive on CC frosting.  I've left it out overnight and been fine, for sure, but I'm not sure about longer than that.  I feel like there's less sugar in CC frosting and CC is less stable at room temp than butter, so I'd probably refrigerate it to be on the safe side.
