chicken soup gone awry! & need ideas for shredded chicken

I made a huge pot of chicken soup w/ 3 whole chickens (Ina Garten recipe). The pot I used must not have been big enough, because a bunch of things burnt on the bottom. As a result, the entire pot of stock tastes like smoke!  So, I can't use any of the stock b/c it seriously tastes disgusting. But the chicken is OK. So now I have a ton of shredded chicken. Any ideas what to do w/ it? I want to make some freezer meals, just looking for ideas. I already made beef enchiladas, I suppose I could make chicken ones, but that would be a lot of enchiladas.

For the record, I'll never make chicken soup w/ whole chickens again!  So messy, hard to get out of the pot, etc.

Tons of casseroles call for shredded chicken.  You could make a curry sauce to put over it, or mix it into pasta with alfredo, pesto, vodka, or whatever sauce.  Put it in pasta salad.  Make chicken salad.  Put bbq sauce on it.  Use it on homemade pizzas or in homemade calzones/stromboli.  I love mixing it with cream cheese, buffalo sauce, and cheddar to make buffalo chicken calzones.  Use it in mac and cheese.  Put it on salad.  Or just freeze it as is to use whenever a recipe calls for cooked chicken.

my brain freaked out after I read you needed 3 whole chickens! 

FWIW, I usually make a chicken broth with the carcass of a roasted chicken, freeze and then use it to make chicken soup at a future time when I have leftover chicken.
