Can you freeze fresh berries?

We had plans tonight to go to a friend's house for dinner, and I was going to make a berry pie (strawberries, blueberries, and raspberries). She just cancelled, and I spent about $10 on fresh berries, and we won't go through them quick enough before they spoil.

Can I freeze them? If so, what is the best way to do so?

  • Yes, you can freeze them. Just wash them, dry them well, and put them in a ziploc freezer bag (try to press out all the air). If you want to use them for pie, pack them by the cup requirements.

    The strawberries are kind of large... would it be ok if I quarter them and then freeze? 

  • Yeah you can cut them.  I usually slice mine or dice them before I freeze them then they are already ready for the muffins/pies/etc.

  • I normally 'flash freeze' mine by putting them on some wax paper on a cookie sheet that way if I only want a small amount they're not all stuck together.

    Absolutely!

    Also, I agree with PPs. Flash freezing does help to make sure they don't stick.

  • I freeze berries, but after that the only things I'll use them for are baking/cooking (pancakes, pies) and smoothies/pureed things.  Otherwise, I don't care for the texture when eating them once they've been frozen.

    Absolutely!

    Also, I agree with PPs. Flash freezing does help to make sure they don't stick.

     

    This is what I do. We go blueberry, strawberry, and raspberry picking and I end up with tons for the rest of the year 

  • I cut them up, mix with flour or cornstarch, sugar, and lemon juice, and freeze like that...that way, my pie filling is already made up, and I just need to defrost a bit and dump it into the crust.
