Food to serve with Champagne?
I have a friend visiting next week and I know she loves champagne, but I'm not sure what food to serve with it for our dinners or even snacks. I read online that mushrooms, scallops, white pizza, nuts, etc go well with champagne, and I even managed to grab a jar of caviar that was on sale - but I don't know if she would eat caviar. I was thinking maybe a flaky pizza with scallops on top? Or certain cheeses to snack on? Any one have any particular recipes or anything that I may be forgetting? Snack foods and appetizers are good too!

Who needs food??? I love me some Champagne!
During the summer I often will have friends over and do Gougeres, some nice pate, one or two cheeses.
Champagne also goes great with a salad with a lemony vinaigrette.
My favorite is toasted pecans, fresh goat cheese or slivers of good Parmesan, pears and dried cherries with a lemon vinaigrette. To make the vinaigrette I take 1 tsp. of grainy mustard, a bit of fresh lemon zest, some fresh chopped thyme (optional, but I don't like dried in this...) a little finely chopped shallot, a drizzle of good honey and two tsp. of white wine vinegar, white balsamic vinegar. Shake those ingredients in a small jar (an old mustard jar works really well.) Add two tsp. of canola or grapeseed oil, and shake well, add two more tsp. of canola or grapeseed oil and shake, finally add two tsp. of good extra virgin olive oil and shake well. So easy and it's delicious!
For an entree, I would also recommend chicken scaloppini with it's lemon caper sauce... very nice with bubbles!
