I have a dining set my MIL gave me. It's a good solid piece with 8 chairs. Unfortunately, it's an orangey honey oak with heavy grain. I'm thinking of stripping/staining the top a dark walnut and painting the skirt/legs and chairs using chalk paint and satin wax.
Has anyone here done that? Is that just a flash in the pan trend? I just don't want to spend the time and effort now to have it feel dated in 6 months!

If it's a nice solid wood with a nice grain, I wouldn't paint over it (but that's just me).
Maybe just stain it darker? You can sand it then use a gel stain.
Annie Sloan's Chalk Paint. It goes on smoothly showing very little brush marks and dries somewhat quickly. It can be done over most finishes (actually just painted over a pair of laquered metal candle sticks with great results). The paint can easily be distressed (if you should desire). Wax is used to finish it, giving it a nice satin finish.
I think that would be really pretty! I'm not a fan of that orange oak color either; if you decide down the road that you don't like the chalk paint, you can always stain it the same color as the top.
