I make this all the time:

I skip the brown sugar (it's sweet enough from the maple syrup) and the coconut chips. Sometimes I only use on kind of nut. You can be flexible with ingredients.
I've make this before and we liked it. I just used this recipe as a guideline though and kind of threw it all together.

Here's the recipe I start with:

And I make the following substitutions:
I use a total of 4 cups combined of old fashined oats, sliced almonds and pepitas. Sometimes I add a couple tablespoons of flax seeds, too.
Then for the spices I use a heaping tsp. of cinnamon and a heaping 1/2 tsp. of cardamom.
I make it just about every week and frequently have requests for it from friends & co-workers. I think it's the cardomom that takes it over the edge.
