How many desserts needed

Hey ladies,

 So i'm throwing my mom a graduation party this weekend for going back to school and getting her degree.  We're expecting 40-50 people.  The focus is a dessert and wine party.  How many desserts should I make for this many people??

So far the list is: 

brownie and strawberry trifle

pink lemonade pound cake

cheesecake with strawberry topping

chocolate covered peanut butter rice krispies (2 9x13 pans)

fresh fruit tray

unknown dish from brother

 

How many more should I make?

  • I think that's plenty.  I had a dessert party 2 Christmases ago and made 6 varieties for 20 people (just 1 batch of most things) and sent practically every person home with overfilling plates.  Most people I know just don't have a sweet tooth - they have a salty tooth.

    Something the girls on here told me, and I really think you should do, is do have a couple savory apps out.  Do veggies and a healthy dip so people can feel better, and maybe cheese and crackers.

  • I agree with some savory, especially a cheese plate with fruit and nuts to cut the sweetness of everything else. Plus, it's very European. Wink
  • I agree with adding the savory- cheese and crackers, nuts, veggies.  I would imagine in a group that large there is at least one diabetic. 

    One thing that might be fun is to get some pretzel rods and dip them in chocolates the same colors as her school.  I'll also add that maybe instead of the brownie and strawberry trifle you do straight brownies or Tarheel's mint brownies.  You have a strawberry dessert and a fruit tray.

  • Posting again after seeing what others have said:

    - I did chocolate-dipped pretzel rods (just with melted milk choc chips - nothing technical) and they were the most popular sweet I had out

    - In contrast to all the leftover sweets, people finished the veggies and dip, so it really is necessary

    - I wouldn't do 2 strawberry things, especially when you already have a fruit tray.  You don't have anything caramel-y, toffee-y.  Maybe add something like that to replace one of the fruits.

     

    If you're wondering, I did snickerdoodles, jam thumbprints, choc pretzel rods, mint brownies, chewy molasses cookies, and one other thing I think that I can't remember.  

    The mint brownies of mine are just box brownies made like you normally would, but a couple minutes before they're done, take them out and layer these on and spread them with a spatula and put them back in the oven for the last couple minutes.

  • thanks for all the advice ladies, i'll totally add some salty/savory items on the side including the pretzel rods. Great point about adding veggies and i'll change one of those strawberry items.  Thank you thank you!  Wish me luck!
  • For a different twist on the brownies, I frequently make salted caramel brownies and they are always a huge hit. They aren't overly sweet and pretty easy.  http://www.doughmesstic.net/2010/03/08/sea-salt-caramel-brownies/

    Veggies and dip, cheese and nuts and I think you are good! it sounds like a lot of fun.

  • I'm in the minority but 3 cakes and some rice crispies might not be enough for 50 people if served as the only course.  I would probably add one or two more options (which could be total overkill but that's how I roll)- my personal favs are cupcakes(reg or mini) and any kind of cakepop(oreo is the easiest and the best IMO).  Also, I would have take-home containers on hand to send extras home with folks.

    And a thumbs up to the cheese platters.
