I'm doing a fairly basic nacho bar for Cinco de Mayo.
oops...left off chili...because I was trying to decide between regular or vegetarian
Hmmm, chili doesn't really scream Cinco de Mayo to me either. That's more of a Tex-Mex type of thing.

I would do a chicken tortilla soup or something similar to that, especially with cornbread.
A great appetizer I've made is stuffed jalapenos. You cut the jalapeno in half and gut the seeds/stems. Brown 1lb breakfast sausage & drain grease, then add 1 brick cream cheese and stir until evenly combined. Stuff the jalapeno with the mixture and bake at 375 for about 20min. You can also use the mini sweet peppers if everyone wont like the spicy pepper.
How many people are coming? It sounds like you've covered all the basics - I'd maybe add tortillas so people have something to eat the meat/veggies in. And here are some other things that might work with what you have, if you really feel like you need something else.

Crock Pot Green Salsa Pork. Ridiculously easy and delicious. I use it as a taco-filling or as an addition to nachos.
1 Jar Salsa Verde
Pork tenderloin [a cut large enough to sit comfortably in your crock pot].
Pour 1/4 jar into crock pot.
Add pork tenderloin.
Pour remaining salsa over tenderloin.
Cook on low for 8-9 hours. [Ehh, how long is up to you. I leave it on all day and turn it off when I get home from work.]
Shred with two forks, mix and serve.
I've been eating this for lunch all week. It's really tasty!
Combine 4 servings of quinoa with a can of corn, 6 roma tomatoes, dice and an english cucumber, diced. Drizzle on 2 tbs of olive oil, 2 tbs of vinegar (red wine, or balsamic) and salt and pepper to taste. Garnish with avocado or guacamole. Scoop with tortilla chips.
