Using garlic scrapes in a recipe?

I got 1 garlic scrape (not sure if that's the right terminology but it's 1 stalk with a bulb on top) in my CSA box and am wondering how to use it?  The farmer said she uses it like a green onion or I could saute it (the stem and the bulb, once peeled).

Any other suggestions?

Re: Using garlic scrapes in a recipe?

  • They're called garlic scapes, no "r".  If you only have one, I'd use it in an omelet or stir fry the same way you'd use garlic, or like the farmer said, a green onion.  Depending on how potent it was, you could use it on salad too.  Later in the season, if you get more, they make really good (though pretty strong!) pesto to toss with pasta or veggies.

  • You could saute your recipe, and it helps make your recipe more tasty.
