  • Do you always wrap your silverware and use place mats? I'm impressed!

    What do you put in your enchiladas?? I need to know because I know it's not meat and therefore I will eat it.

    I wrap and switch my napkins out every three days or so unless they are really dirty. Yes we always have placemats and napkins because

    A) I don't want to use paper napkins that will end up in a landfill.

    B) I don't want anything damaging my table and we are sloppy. :)

  • We use cloth napkins, but I don't wrap them. Most of the time, I don't even fold them when they come out of the dryer.

    I'm sorry. I forgot. Tonight was chorizo seitan because I was feeling lazy. Sometimes I do a mixture of red and green lentils or black beans. Others I press my tofu and season it with a premade mexican spice pack. I also used the humnut cheeze sauce recipe tonight because again, I was feeling lazy.

    I would read your blog. I read VeganDad and OhSheGlows pretty regularly.

    But in the meantime, if you want to share your top three favorite recipes (preferably including this enchilada), I would be most appreciative.

    These probably aren't my absolute favorites but they are my go to's.

    (1) black bean burgers.

    -1 can black beans (drained and mashed)

    -1/3 cup quick cook oats

    -1/8 cup flax 

    -1 tbsp tahini 

    -1 tsp garlic

    -1 heaping tsp cumin

    -1 tbsp brewers yeast

    (mix together, let flavors blend for 20 mins, shape into patties and heat over stove) I usually cook this with sweet potato fries or zuchinni sticks.

     

    Enchiladas with Cheeze Sauce - This is NOT healthy in any way. :)

    -Corn tortillas

    -Canola oil

    -Enchilada sauce (you can used canned, but I really like this recipe: http://www.food.com/recipe/mexican-enchilada-sauce-109685 )

    -Chorizo seitan (this can be bought premade at whole foods. I use and prefer Upton's)

    Heat the oil and fry your tortillas till slightly crispy. Let the oil drip off and then immediately dunk in your enchilada sauce. Add in your (cooked) seitan and roll into a tiny enchilada. Top with daiya or humnut cheeze (recipe can be found on ohsheglows) and bake at 400 for twenty minutes.

     

    Squash Patties (Also not overly healthy but tastes great) 

    - 1 zuchinni

    - 1 yellow squash

    -Flax egg (1 Tbsp flax and three Tbsp warm water)

    -1/2 cup tomato paste

    -Add bread crumbs if too runny....

    Shape into round patties. Fry in olive oil until both sides are crispy. Serve over a bed of wild rice and spring mix. Yum.
