  • Saturday - roasted chicken, gougeres, asparagus

    Sunday - california roll burgers

    Monday - lentil marinara over spaghetti squash

    Tuesday - risotto with peas, pesto, and salmon

    Wednesday - more lentil marinara over spaghetti squash

    Thursday - chickpea biryani

  • Lots of salads, just for Bridget. ;-)

    Southwestern stuffed sweet potatoes, avocado salad with lime vinaigrette

    Ground beef stroganoff, salad

    Cuban pork quesadillas, black bean/corn saute

    Cashew chicken with brown rice

    Provolone and pesto pita pizzas, salad

    Canadian bacon & cheddar omelets, toast

    Awesome.  Particularly because I'm having company next Friday and I'm making tortellini.  I figure I have to serve a side salad with it to make it seem like a complete meal, so I'm trying to figure out how to do that so I actually enjoy it!

  • Sat: herbed white chicken pizza

    Sun: at a birthday party

    Mon: white bean ragout with toast

    Tues: goan beef curry, naan, cucumber salad

    Wed: DD and I have a date for Mexican

    Thurs: Athenian shrimp orzo (for real this time, the last two times I've had it on the menu I've ended up changing it a lot for various reasons)

    Fri: TBD, Bridget's lentil marinara is looking really good though, and DD would be much more receptive to it than DH, and he's OOT

  • I actually have a menu plan this week! It's a big week at our house! :) 

    Saturday: Pan fried smoked salmon cakes with lemon and herb aioli, roasted potatoes and salad.

    Sunday: Cuban sandwiches and oven fries

    Monday: Shrimp Fajita Pasta

    Tuesday: Chicken and Corn Chowder

    Wednesday: Some form of stuffed chicken with pan sauce, roasted carrots and salad

    Thursday: Lemon Garlic Shrimp and Grits

    Friday: Aquatica (local water park) and then a concert that night for a friends band. So most likely packing lunch and eating dinner on the cheaps out. icon smile Menu Plan: 4/28 5/5

    GRADUATION!!!! Plus it?s Cinco De Mayo. I have zero plans to cook but do intend on celebrating! icon smile Menu Plan: 4/28 5/5

    Mon: Buffalo Chicken Burgers
    Tues: Baked Quinoa and Chicken Parmesan
    Wed: Grilled Cheese Crepes with Shaved Asparagus
  • The plan, not sure of what days for what:

    • jambalaya w/corn bread
    • mexican lasagna w/salad
    • pot roat w/mashed potatos and carrots
    • hot roast beef sandwiches w/potato pancakes & broccoli
    • pasta w/(frozen) homemade marinara, salad & garlic bread
  • M:  chicken hot dogs and sweet potato fries (DH is up to bat)

    T:  kale salad, herbed cheese quick bread

    W:  egg sandwiches and hash browns (DH again)

    Th:  PW's perfect pot roast
