freezer friendly meals for a 17 month old?

My BFF is having her second baby this month and I wanted to prepare meals for the whole family. What foods are kid-friendly and will freeze well? I already plan on making some mini-meatballs, but I'm looking for other suggestions.

  • It depends on the kid, but mine will eat pretty much anything we eat. I'd say safe bets are things like baked pasta dishes, mexican lasagna/enchilada bakes (my DS is freaking obsessed with beans and asks for them every day. He likes a little spice, but if you're worried, that's always something you can control). Pulled pork or chicken, burgers, homemade fish sticks. It's always nice to do non-dinner things, too, like muffins, scones, pancakes/waffles, hummus, etc.

  • When we had our baby I made these breakfast and dinner burritos for the freezer.  They are so easy and you can make a ton all at once.  What I loved about doing this was that we also had food for mornings, too, since so many people tend to bring dinners.

  • I froze tons of soups, mini quiches, quick breads, yeast breads, whole wheat pancakes when I had our daughter. It was awesome. My toddler daughter basically eats everything we eat.
