need ideas for a whole bunch of eggs...
mistakenly bought a dozen & forgot I bought a dozen last week. ugh!
what to make besides quiche/frittata/omelets or egg salad?
MH does not like quiche or frittata type things so I'd be eating that on my own. Anything freezable & kid friendly would be really awesome.
Had I realized it before this morning I would have made deviled eggs for some ppl I had over for brunch. argh.

you could also make egg sandwiches or burritos and freeze them for breakfasts

You could make some great desserts that have a lot of eggs:
Cheesecake, Flan, egg custard, or bread pudding.
If you are looking for side dishes:
Baked pineapple, noodle kugel, or potato and egg casserole
Spaghetti Carbonara (use egg whites for a quick omelette)
Pasta with Poached Egg & Peas

Egg salad for sandwiches?
I recently made eggs in my muffin pan. Crack an egg into each well, sprinkle w/ s&p or whatever seasonings you'd like and bake for 20mins. Let cool and keep in the refrigerator in an air-tight container. They've lasted all week for me and I just toast an english muffin, add a piece of cheese, put an egg on there and microwave for just a bit to melt the cheese and warm up the egg. Super easy and tasty!

I think I'm going to plan my whole week's meals around requiring at least 1-2 eggs. LOL.
I usually have up to 6 dozen here at a time, just for the two of us. Yours should keep in the refrigerator just fine. Actually, they are fresh 3-5 weeks AFTER the sell-by date. See www.stilltasty.com
LOL- I have always kept eggs for very long periods of time but now w/ kids I am suddenly paranoid about keeping them too long. But I didn't realize 3-5 weeks, I thought it was like a week past that date.
This is super easy and uses up 8 eggs.
