another question for cake decorating ladies......

Thanks for all your info on the size of the cake and the ratio of the buttercream!

I am planning on doing a crumb coat before the final frosting. I am trying to save time and do what I can the night before.

Should I crumb coat and store in the fridge overnight? Or can I crumb coat and store out at room temp? 

Or do I need to do the crumb boat that morning, pop in freezer for a bit, then final layer of frosting, back in freezer before stacking?

I wanted to do the crumb coat and final frosting the night before and store in the fridge, (so I can just  get up and stack it/decorate it that morning) but I am soooooo afraid of spending all the time on smoothing it out and then having someone (or me) drop something or screw up the final layer. 

Please share your usual process......thanks!!

  • I usually do my crumb coat and then put it in the fridge to set.  It makes the final layer go on a bit smoother and I don't get crumbs in the final layer too.  I think you'll be fine to keep it in the fridge until you're ready to final coat it.  Just let it get to room temperature before you serve it.  It should be fine!

  • Ditto what PP said.  I usually do my crumb coat the night before or early in the morning and refrigerate it.

  • Crumb coat the night before and refrigerate it like pp have said. You want the crumb coat to seal everything so you want it to be cold.  Also makes frosting easier the next day.
