Does the meat need to be cooked first?

I'm making this tonight, but the recipe doesn't say to cook either meat first. Wouldn't it be super greasy if I don't cookdrain at least the bacon first?

  • I'm guessing the meat doesn't need to be pre-cooked, but you certainly could.  I agree that it might be kinda greasy otherwise.
  • I would cook (and drain!!!) the meat first...the meat will cook in the oven, sure, but as you suspected, it will likely be REALLY greasy.  If you do pre-cook the meat, you should not have to bake it for quite so long--just until the top pastry is cooked.  I might bake it at a slightly higher temp to encourage that to happen quickly.  I might also add just a touch of broth or water or wine or something to the meat part to prevent it from drying out.
  • I agree with others that it doesn't need to be, but probably should. I'd cook the pork and probably only cook the bacon like halfway, because I actually prefer non-crispy bacon, and then some of the bacon fat could render down. I like some fat/grease. ;)
