need easy vacation meal ideas
we'll be going on vacation for a week and staying in a condo at the beach in the summer. There will be two 30 yr olds, one 70 year old, one two year old and a baby. The 2 yr old eats pretty much anything we try BUT she is lactose intolerant so anything I make can't have cheese or milk in it. she does eat cake that has milk baked in it. There is no grill and I think it's an electric stove, I'm used to gas. I plan to go shopping once I get there and only want to buy what we will use for the week. Any meal plan ideas? I don't want to be stuck in the kitchen all day in the heat but am hoping to cook at least 5 of the 7 nights with leftovers for lunches. TIA

Are you going to be driving? If so I'd make some meals ahead of time (enchiladas, lasagna, etc.), freeze them and then pack them in a cooler for the trip. Then you'll just have to defrost and heat there.
Or, bring your crockpot. There are a lot of recipes that are just dump-and-heat so you won't have to do a lot.

When I was on vacation, I bought two rotisserie chickens and used their meat to make a chicken and rice dish and chicken alfredo. We had roasted veggies to go along with both, since they need pretty minimal seasoning. We only bought salt, pepper, garlic powder, and an all-purpose seasoning blend. Those dinners were both quick and easy, due to the rotisserie chicken! BF and I were able to eat off of both of meals for a couple nights each.
We also got lunchmeat, cheese, and bread for lunches, and some cereal and milk for breakfast.
Electric burners and ovens need time to heat up and cool down. Changes in temperature are gradual with electric.
When we go to the beach, I purchase/pack a ton of fruit in between frozen bottles of water. Because I am in the sun all day, the fruit just tastes better.
plan per day. As a grocery list,I would buy potato, pasta, meat and a couple cans of peas and carrots (or fresh) and veges.
1. spaghetti and meat (need spaghetti, sauce and meat)
2. baked potato (since 2 yr old is lactose intolerant) and meat (need potato and meat) or raost veges and meat. Potato can also be mashed as another meal.
