I received a bundle of collard greens in my CSA yesterday. I have never had (made or tasted) collard greens before. I've seen them wilted/cooked down in bacon grease on cooking shows before, so I will probably go that route. Does anyone have any recipes?
Also, I tried Kale last week for the first time (also from my CSA), should I expect the two greens to be similar? I used this recipe for the Kale: http://www.foodnetwork.com/recipes/bobby-flay/sauteed-kale-recipe/index.html
Thanks!
Re: Collard Greens
In addition to the bacon method (which is awesome), we also liked this recipe:

This is also a good recipe to have in your pocket for CSAs because it uses a lot of greens.

I make them the "soul food" way lol
Large pot with either ham hocks or smoked turkey wings and enough water to cover. I add crushed red pepper, hot sauce and some white vinegar. Enough water to cover the greens and cook away for a few hours. I typically let the water and meat cook at least 30 minutes before adding the collards
