I plan to crumb coat the cake the night before. I may not be able to put it in the fridge overnight due to not having enough room in the fridge.
I can leave it at room temp and the "seal" from the coating of frosting will keep the cake fresh, right? I want the coating to "set" as much as it can overnight, then I was thinking of popping it in the freezer for 30 mins prior to putting the final frosting layer on.
If I have enough room in the fridge, I will put them in there, but then I am worried about condensation on the crumb coating forming? I am in VT, so thinking it will not be a problem, but that would throw a big kink in things :-)
