CSA Box 4/28-5/4

Ok ladies, I know a bunch of people said that they would enjoy a post like this, so I'm going to keep it up, even though it's not getting much traffic.  Please share, if you belong to a CSA!  What's in your box and how are you planning on using it?

This week, I got apple cider, strawberries, radishes, collard greens, lettuce, and a bunch of yellow squash.  I also got eggs, ground beef, and ground sausage for my egg and meat shares.

My plan is to use the radishes and lettuce for salads (I haven't eaten this much salad since high school!), do a baked mac and cheese-type thing with collards in it, and either grill the yellow squash or make fritters.  The strawberries are already gone--BF and I devoured them straight out of the container last night.  Smile  The cider will probably get mixed with something or another alcoholic, or I might let it ferment to make hard cider.

    Button mushrooms, collard greens, garlic chives, romaine

    Button mushroom and romaine will be used in salads.  I will probably also sautee some sliced mushrooms in butter and serve over sausage sandwhiches this week.  The garlic chives go in pretty much anything, they are chives that have a garlicky taste, so I feel like goes with everything.  For the collards, had them last night Guy Fieri style: http://www.foodnetwork.com/recipes/guy-fieri/southern-collard-greens-recipe/index.html

  • I do not get our stuff until tomorrow, so this is just a guess.

    asparagus, garlic, rhubarb, eggs, milk, pork (I am not sure what cut), herbs (not sure what type), green onions, and some plants (I am hoping for a rosemary)

    I am going to grill the asparagus. The rhubarb will become a rhubarb crisp. The eggs will be breakfast this week. Pork will be grilled. 

    I have ton of stuff ready in my garden including broccoli raab, Asian greens, lettuce, mustard, anise hyssop, orange mint, lemon thyme, regualr thyme, and green onions. I will be eating salad like a mad person all week.

    I am jealous of your strawberries. Our strawberry plants have some berries on them, but they are not ready yet.

  • I just wanted to say that I don't live in a place that does the CSA boxes, but I am moving somewhere and find it fascinating to see what everyone gets, so I do appreciate the posts.
  • Our CSA doesn't really start until the middle of June but I reserved a box from the farm that we get it from. (There are too many potato and root veggies this time of year and we don't go through them fast enough... Luckily I can order a box just when I need it!) Today we received potatoes, beets, spinach, apples, carrots, parsnips and radishes. I can't wait to roast the beets this week!
