steel cut oats...?

ok so I bought some steel cut oats b/c I really like hearty oatmeal. I went to make it this AM and it says to bring 4 c water to a boil, add a cup of oats, continue to boil until it 'starts to thicken' and then simmer for 30. What exactly does it mean by thicken & how long does this generally take? I was thinking it would be a short time but after 6 min or so there is no 'thickening' going on (the oats are getting a little bigger but there is still a lot of water in there) so I just turned it down to a pretty active simmer...what am I missing here? Is the thickening thing a really long time or am I misinterpreting 'thicken'?

  • it usually takes at least 20 minutes and will still have a "bite" to it..by 30 min it would be pretty soft.

    I prep mine in advance like this:

    boil water..add the oats. place a cover on the pot and turn off the heat.

    A few hours later  it will be done ( or just leave it overnight and eat for breakfast)

    I've never timed it. so I don't know exactly how long.  It has always turned out fine though.

  • I love steel cut oats and the only way I can make them is also the easiest way in the world. I use the crock pot. It's probably the most use I get from my slow cooker. 

    1 cup steel cut oats

    2 cups water

    a few shakes of salt (about 1-2 TSPS)

    Combine all ingredients, set cooker to High and cook overnight for about 8 hours. Divide into 4 equal parts, eat warm or store in refrigerator up to 4 days. Serve with any combo of raisins, chopped nuts, brown sugar, splenda and/or milk or vanilla soy.  

    You can also add raisins or dried fruit to the pot while cooking. 

    My darling daughter just turned 4 years old.
