I've heard many good things about Rachael Ray's "You Won't Be Single For Long Vodka Sauce." haven't personally made it though.

I liked this:

Here's my recipe it will make 2-3lbs of pasta depending on how much sauce you prefer on your pasta.
In a 1 1/2 to 2 inch deep pan:
1. Put one stick of butter and one medium onion chopped-simmer for 20mins (add teaspoon of minced garlic if you like garlic)
2. Add 1/4 cup of vodka(you choice)-simmer 15 mins
3. Add large can of crushed peeled tomatos(I use Rienzi)-add medium can of hunts tomato sauce-simmer 15mins
4. Add heavy cream slowly while stirring until you reach the color you want(the lighter pink the richer it is, I prefer medium pink so it's not too heavy or light)-simmer 15 mins
5. It's ready to serve!!!!!
This is a vegetarian vodka sauce, if you want to add prosciutto or pancetta you do it with step one so it cooks in with the butter and onion which really brings out the flavor of the meat
Enjoy, hope you like it!!!
