what to do with blueberries?

trying to get my two year old to eat more blueberries to help her digestion. I was thinking blueberry muffins? anyone have a good recipe? I have to use whole wheat flour and no milk or cheese. Any recipes you have tried, doesn't have to be muffins. TIA

  • I make muffins a million ways and always make then healthier for my 18-month old.  Just start by subbing half or more whole wheat flour and using soy or coconut milk in place of the regular milk.  I often cut oil back a tad (you can add some applesauce etc in it's place but I'm not overly concerned about fat content).  I also start with healthier muffin bases...so instead of just a plain whole wheat blueberry muffin I recently made oatmeal banana muffins, subbed shredded carrots for half the bananas, added blueberries, and made them half whole wheat.

    Muffins are pretty forgiving.  Just tweak your favorite recipe a little bit at a time.

    This was the base I used for mine (except muffins instead of bread). But as you can see lots of tweaking.

  • pancakes? you can use soy or almond milk in place of real milk too.

  • I don't post too often, I make zucchini muffins with blueberries in them, yummy.  Plus they freeze really well.  

    Also for my LO I bought frozen blueberries and pureed them and I add the puree to pancakes so theres no chunks (but they do come out blue, lol).
