Hi ladies. I mostly lurk here for some good recipes and am in the process of getting better at cooking/baking so that I can update my blog with delicious recipes and pictures. My husband and I recently went to a 90% vegetarian diet and have been mostly successful. Our main problem we keep running into though is vegetarian lunches. We love salads but end up in a salad rut so often. When we were mainly meat eaters, we brought sandwiches a lot to work - not usually just plain jane sandwiches either, they were usually decked out. We're not super interested in getting "meat substitutes" or leftovers everyday for lunches either. I know it sounds very specific but I'm hoping you have some ideas for us - blogs, websites, books, etc.

Also, look into grain salads--cold rice, quinoa, barley, pasta, bean, or whatever salads often times taste better after they've sat a couple days, so they're great for lunches. Plus, no need to re-heat.
I do lots of wraps with avocados, hummus, lettuce, peppers. What about pita pizzas with veggies....almond butter and bannnana sand are my fav lazy go to....

That is a really great salad that is easy to make and tastes better the next day:)
Also if you google "rebar peanut sauce" that really turns quinoa salad into something amazing. GL!

I am not vegetarian but don't eat meat for a lot of meals, I make a lot of grain and veggies salads.

I make a lot of salads with grains and beans. I also frequently bring almonds, hard boiled eggs, pb&j, cheese, and hummus. Angela liddon's vegan blog oh she glows had good salad ideas.
Today I had lentil salad (lentils, cucumber, tomato, pepper in Dijon, red wine vinaigrette and olive oil dressing), hard boiled eggs and fruit. Toasted chickpeas are good too.
