XPCatering a Graduation: How much food do we need?

I posted on entertaining, but I know you ladies host a lot of parties too.

A friend asked me and my sister if we would cater her son's graduation party (50-75 people). She wants the following dishes:

Ziti dish with meatballs
Veggie Lasagna
Chicken with gravy
Salt Potatoes
Sauteed Green Beans
Green Salad

I figure about 10lbs of Green salad, 30lbs of salt potatoes, and 20lbs of green beans.

I have no idea whether a full pan (full catering size) each of the ziti, lasagna, and chicken is enough for that number of people.

Any ideas?

    I'd rather have too much food than too little, generally speaking.

  • Not sure if it's high school or college, but if you will have a decent number of high school boys there you need to account for them. I find they eat 150% of what a normal human eats.

    I would probably add one more tray (two if you'll have high school boys) and some kind of bread.
