What is the appropriate serving size of an avocado?
It is just Dh and I, so when I open an avocado and we eat it straight (maybe with some salt) or with eggs, I tend to give half to each of us. I hate seeing it go to waste, but I am wondering: what is an appropriate serving size of an avocado? A quarter of one? If you are splitting it or just eating it yourself, do you throw most of it away?

I usually divide one avocado between the two of us, and then DH tends to eat slightly more than me.
But if you don't want to eat it all at once, it doesn't have to go to waste. Just leave the peel on and the seed in one half, then press plastic wrap directly against the surface. You can refrigerate it for a couple days. It works even better if you rub the plastic wrap with lemon or lime juice before using it. The avocado might still get a little brown on the cut surface, but you can just slice that off and use the rest.
