::::What's for dinner? Summer edition::::

I feel like I do this every year at this time.... The weather is heating up and I don't want to use the oven as often.

What are your go to foods during the Summer?

We BBQ a couple of times a week, hamburgers, hot dogs, chicken... But besides using the grill, what else do you make. DH is not picky but we do have a 10 yo DS and neither him nor I are super crazy about heavy onions/peppers.

  • pasta salads, salads, stir fries
    making every bite count dough see dough
  • Definitely pasta salads!  Grilled pizza is also really easy and a good alternative to heating up the whole house with the oven!  I made a French Lentil Salad this afternoon to have for dinner tonight & it was awesome!
  • I use the crock-pot a lot in the summer because it doesn't heat up the kitchen.   I make pulled pork for sandwiches, chicken and beef for tacos, things that make a lot and I can easily reheat.

     I also make a ton of entree salads.  I love taco salads, Chinese chicken salad, Mexican side salads, pasta salads, macaroni salads, etc.

  • Like Heather, I'm a fan of the crockpot in the summer too.  And obviously the grill.

    Salads are big...it's easy to make a meal out of them by beefing them up with protein and veggies.

    Pesto Pasta Salad with Grilled Chicken

    Tuna Pasta Salad 

    you can add protein to:

    Lemon Lentil Salad

    Grilled Ciabatta Bread Salad

    Kitchen Sink Orzo Salad 

     

     

  • i dont eat hot dogs or hamburgers a lot (those are junk food to me-and only eaten rarely for a treat). for the summer i eat a ton of salads, fruit, grilled chicken, turkey sausage and peppers an onions, a ton of grilled veggies, cucumber salad etc...i also occasionally grill a small steak. during the summer i tend to eat really light.
    Friday, December 28 2012. The day I had emergency appendix surgery in Mexico and quit smoking. Proof that everything has a good side!! DH and I are happily child-free!! No due date or toddler tickers here!! my read shelf:
