Healthier Chicken Enchilada recipe??

My husband loves them and I would like to try a healthier version, not that I have ever made them--thanks!

    I don't think they are that bad for you...just make with a moderate amount of cheese.

    This. Use whole wheat or stone-ground corn tortillas, shredded chicken, moisten with crushed tomatoes and plain Greek yogurt (GREAT alternative to sour cream!) and nutrient-rich avocados! Top with low-fat cheese, and voila!! :)

  • Yeah I think the key is just to limit the cheese.  Also don't fry the tortillas.  I just put a couple chicken breasts and an onion in the crockpot with some water.  Shred the chicken and simmer it with some of the enchilada sauce (I use the green kind) and some shredded pepper jack.  Then I roll it into corn tortillas with a little more sauce in each.  Top with more sauce and cheddar cheese and bake for 30-40 minutes.  Serve with whatever toppings you like.
