Anyone have one? I've never made one, but we have 3 dozen eggs and I thought this was a good way to utilize them. I am currently thinking, cheddar cheese, potatoes and onions, but that's all I have right now.

Your idea sounds good to me. My mom just made a quiche with tomatoes, onions, bacon and cheese. It was so delicious.
I make a breakfast casserole every Christmas that includes Italian sausage, shredded hash browns, fresh spinach, diced onion, shredded cheese, and a dozen eggs. I usually get bulk sausage and saute it first. Then I saute the onions/spinach a little bit in the sausage renderings. Add to a greased baking dish and let cool. Then add the hash browns and cheese, mix everything up and pour the scrambled eggs over the top.
