Meals with 30 min prep time or less?
I have a baby and I'm pretty tired of take out or frozen dinners... I am going grocery shopping today and I would like some ideas of what kinds of things I could make through out the week? Something that I can make during nap time, or even before dinner time. Any suggestions?

Do you have some extra time on the weekends where you could portion things out and prep veggies? Most veggies will stay fresh even cut up through the week.
Making soups on the weekend could help you out too. Otherwise, burgers, tacos, fajitas, spaghetti, chicken tenders, shrimp scampi, broiled or baked fish, etc.
I have an Emeril book, I think its called 20-40-60 and he has a huge selection of foods you can make in those times.

I'm a big advocate of trying to make things on the weekend and then freezing half and setting aside the other for during the week. I also have a few recipes that you can make from scratch in less than 30. A lot of them are are less than 15!
