Roast is chewy

UGH, so after this, I think I am officially giving up on cooking roasts!

I seared it in a pan, then put in a crock pot so it could cook all night.  Carrots on bottom, roast, then onions, garlic, etc.  Cream of mushroom, plenty of liquid.  I turned it on low, checked it last night when getting home, and its CHEWY!  UGH

MH says I should have put the crock on high first, then cut it down to low ...

Please help!  I don't want a chewy roast! Sad

Re: Roast is chewy

  • What type, cut and size of meat did you use?  Also, what size is your crockpot?  Cheaper cuts of meat with more fat are better for the crockpot b/c they have more connective tissue that needs to be broken down, and have more fat to keep them moist.  Also, I have a large crockpot and have found that if I put in a small-ish roast for 8-10 hours on low it tends to dry out.  If that's the case, you can put the roast in a ceramic baking dish that it better, cover, and put the whole ceramic dish in the crock pot - this keeps it moist.
  • Don't give up on cooking roasts! Roast is my hubby's favorite meal so over the past 3 yeas I have almost perfected how I cook it. It always works out for us to cook it during the day instead of at night, mostly because I don't like to re warm it up after its already cooked. The night before I want to cook it I usually go ahead and place the RAW (don't sear it!!) roast in the crock pot dish, add all of the also raw veggies and seasonings (I use 1 or 2 cans of cream of mushroom soup mixed with 1 packet of dry onion soup mix and about enough water to just barely cover the bottom of the crock pot). I then put that in the fridge overnight so that in the morning I just have to stick the dish into the crock pot base and turn it on low, and I let it cook all day (generally 6-8 hours). And not once have I had a bad tasting roast. Even with some cheap roast (really wanted roast but couldn't afford the really good kind!) the flavor is still good and the texture is wonderful!
