Seeking easy/cheap Brunch recipes for 25 people

We are planning on having DD baptism at our house.  Need to feed 25 people. Do you have any tried and true recipes?  Thanks!

  • This is absolutely my favorite breakfast casserole. It makes a 9x13 pan. You can mix it up ahead of time, and then pop it in the oven when you need it. Also, I've reheated the leftovers with pretty good success. You could probably bake the whole thing ahead and then just reheat it when folks come over.

  • Another thought...muffins are something you can easily make ahead, and it's easy for people to grab them and eat them. I like these:

  • Melon Salad

    1 Watermelon, 1 honeydew, 2 cantaloupe, 1 pint blueberries and 1 cup ginger ale. 

    Cut melons into spoon sized chunks.  Pick over blueberries to remove stems.  Mix melon and berries together  Pour one cup of ginger ale over.   

  • french toast casserole 

    overnight egg and sausage casserole (I don't have a recipe for this, but basically I combine cooked ground sausage, hashbrowns, sauteed spinach and onions, eggs and cheese) or a few quiches

    assorted bagels/cream cheese

    assorted muffins/scones/pastries

    fruit salad

    honey-baked ham served at room temp with small hawaiian rolls and mustard

  • This is my absolute favorite breakfast casserole. My Mom makes it every year on Christmas and it's inhaled by everyone.

    Sonoran Sunrise Bake

    1 lb. bacon
    2 T butter
    1/2 c chopped onions
    3 T chopped roasted red peppers
    1-4 oz. can chopped green chilies
    7 thick bread slices, cut into 1-inch pieces
    1/2 c shredded Cheddar
    1/2 c shredded Monterey Jack
    8 eggs
    2 c 2% milk
    1/2 t chili powder

    Cook bacon, crumble into large pieces, set aside.  Cook onions until translucent (approximately 4 minutes), add roasted red peppers and green chilies, set aside.  Grease a 9x13" pan, line with bread cubes, top with bacon and cheese.  Whisk the eggs with milk and chili powder then pour over the casserole.  Cover and chill at least 3 hours and up to overnight.  Let stand at room temperature for 30 minutes then bake on 350 for 60-70 minutes until the center is set.  Let stand for 10 minutes before serving.

    Serves 14.

  • GFS sells a really yummy french toast casserole.  It is very big and bread pudding-y.  Delicious!   I have tried making similar dished from scratch, but none are as good as this one.
